1 14oz. can diced tomatoes drained
or 8 garden roma tomatoes diced
2 cans Rotel tomatoes & green chiles with liquid
1 clove crushed garlic (more to taste if desired)
1 tsp salt (more or less to taste)
2 tsp cumin (more or less to taste)
8 green onions chopped
1 white onion diced
2 heaping T of diced jalepenos
or 3 fresh diced jalepenos seeded and diced (more or less to taste)
3 T white vinegar
3 T vegetable oil
Toss all in large mixing bowl, serve when chilled with tortillas. May freeze if stored in plastic canning containers, leave room for expansion.
